Turkey Burger Sliders and Turkey Taco Lettuce Wraps

Looking for something a little lighter for your Super Bowl party?  Try these great recipes using ground turkey.

Suggested Pairing: California Pinot Noir or Brown Ale

Turkey Burger Sliders (Makes 24 sliders)

  • 2 lbs lean ground turkey
  • 2 tsp black pepper
  • 2 eggs whisked lightly
  • 3 cups caramelized onions
  • 1 ½ cups panko bread crumbs
  • 2 avocados sliced
  • 3 TBSP Worcestershire sauce
  • 6 roma tomatoes sliced
  • 2 TBSP whole grain Dijon mustard
  • Sliced smoked gouda
  • 2 TBSP granulated garlic
  • Slider buns of your choice
  • 1 TBSP kosher salt
  • Fresh chives for garnish

In a large bowl combine the ground turkey, eggs, panko, Worcestershire, Dijon, garlic, salt, pepper, and 1 cup of the caramelized onions.  Mix with your hands or in a mixer with a paddle attachment.

Form the mixture into 3-4 inch patties and place on a baking sheet.  Refrigerate covered for 1-2 hrs.

On a preheated seasoned grill cook each burger for 2-3 mins per side.  Ground turkey cooks very quickly so be sure not to overcook.  Top with sliced gouda just before pulling them off.  Pan spray each cut side of slider buns and add them to the grill for 1 minute per side to get nice grill marks.

Place sliced avocado on bottom half of bun, then top with a burger, sliced tomato, onions, chives and bun top.

Turkey Taco Lettuce Wraps

  • 2 TBSP extra virgin olive oil
  • 2 heads artisan romaine hearts
  • 1 small sweet yellow onion sm. diced shredded
  • Mexican cheese
  • 1 lb lean ground turkey
  • diced tomatoes

  • 1 tsp kosher salt
  • diced red onion
  • 1 TBSP tomato paste
  • diced avocado
  • 2 TBSP taco seasoning
  • chopped fresh cilantro
  • 1 cup low sodium chicken broth

Heat oil in a large skillet over medium high heat.  Cook onion until soft, 3-4 mins.  Add turkey and season with salt.  Cook about 4-5 mins until meat is cooked through, stirring often to break up meat.

Stir in tomato paste and taco seasoning and continue to cook over medium heat 1-2 mins.  Add broth and simmer, stirring occasionally, until thickened, about 2-3 mins more.

Divide meat mixture among lettuce leaves, top with onion, tomato, avocado, cheese and cilantro.
