Curry Shrimp Rice Bowl

Suggested Pairing: Oregon Pinot Gris

  • 2 TBSP olive oil
  • ½ cup finely chopped shallots or red onion
  • 1 lb 21-25 shrimp
  • 2 garlic cloves minced

  • 2 tsp curry powder
  • ½ cup Greek yogurt

  • 2 TBSP honey

  • 2 TBSP chopped fresh cilantro
  • 1 TBSP water
  • 1 tsp kosher salt
  • ½ tsp black pepper

In a large sauté pan or cast iron skillet heat oil over med-high heat.  Add onion, cook and stir 2-3 mins or until tender.  Add shrimp, cook and stir 2 minutes.  Add garlic and curry powder, cook and stir another minute or until shrimp turn pink.  Turn off heat stir in remaining ingredients and adjust seasoning as desired.  Serve with hot cooked rice and your favorite sautéed vegetables.
