Grilled California Caprese Chicken Breast

Recommend pairing with a Chilean Sauvignon Blanc

Next time you feel like grilling, try this flavorful chicken dish topped with some fresh ingredients!  Remember to buy local whenever you can.  For a great vegetarian option try it with a portabella mushroom!


  • 1 cup balsamic vinegar

  • 1/2 cup honey

  • 4 cloves garlic minced

  • 2 Tablespoons olive oil

  • 2 teaspoons Italian seasoning

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 6 boneless skinless chicken breasts

  • 12 slices fresh mozzarella cheese

  • 2 avocados diced

  • 2 heirloom tomatoes diced and strained for 30 mins

  • 1/2 cup fresh chopped basil plus more for garnish

  • salt and pepper

  • balsamic glaze for drizzling 


In a medium sized bowl whisk the balsamic vinegar, honey, garlic, olive oil, Italian seasoning, and salt and pepper. Add the chicken breasts and coat. Marinate for 6-8 hrs. or overnight 

Meanwhile, in a small bowl add the avocado, tomato, basil, salt and pepper to taste. Set aside.

Heat the grill to medium high heat. Grill the chicken on each side about 6 minutes or until cooked throughout 165-170. Top with mozzarella cheese and avocado, tomato basil mixture. Drizzle with balsamic vinegar and top with basil.  Serve immediately.
