Grilled Lime Adobo Rubbed Pork Loin Chop

Suggested Pairing: Fruity Sauvignon Blanc or Chenin Blanc

  • 5 TBSP olive oil

  • 3 tsp cumin

  • 4 TBSP smoked paprika

  • 3 tsp red pepper flakes

  • 3 TBSP dried oregano

  • 3 tsp finely grated fresh lime zest

  • 2 TBSP minced garlic

  • 2 limes juiced

  • 2 TBSP brown sugar

  • 3 tsp kosher salt

  • 2 TBSP honey

  • 1 tsp black pepper

  • 4 pork loin chops 1 ½ – 2 inches thick

Prepare grill for direct-heat cooking with medium-hot charcoal placing the charcoal on one side of the grill.

Combine all ingredients except pork chops in medium mixing bowl to form a paste.  Rub paste all over chops coating liberally. Allow chops to marinate for at least 4 hours. 

Thirty minutes before grilling take chops out of the refrigerator.  Grill the chops over the coals turning over occasionally and moving them around if flare-ups occur, until browned about 3-4 minutes.  Move chops away from coals and cover with foil or inverted foil pan or roasting pan.  Continue to grill turning once until desired doneness, recommend 145-155 in center, about 8-10 minutes.  Serve with rice pilaf and your favorite vegetable. (Serves 4)
